- ½ tsp ground coriander
- ½ tsp salt
- 1 tbsp olive oil
For the Spiced Chickpeas:

- 1 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp cayenne pepper (optional, for heat)
- ½ tsp ground cumin
- ½ tsp garlic powder
- ½ tsp salt
- Juice of half a lemon
Instructions
Cook the Golden Rice:
- Heat olive oil in a medium pot over medium heat.
- Add turmeric, cumin, and coriander, and stir for 1 minute until fragrant.
- Stir in rinsed basmati rice until evenly coated with the spices.
- Pour in coconut milk (or broth) and add salt. Stir to combine.
- Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
- Once the liquid is absorbed, remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
Prepare the Spiced Chickpeas:
- Heat olive oil in a skillet over medium heat.
- Add chickpeas, smoked paprika, cumin, garlic powder, cayenne (if using), and salt. Stir to coat the chickpeas evenly.
- Cook for 5–7 minutes, stirring occasionally, until golden and crispy.
- Squeeze fresh lemon juice over the chickpeas for a zesty finish.
Assemble and Serve:
- Spoon the golden rice into bowls.
- Top with spiced chickpeas and your choice of garnishes: fresh cilantro, a dollop of yogurt, and a wedge of lemon.
Notes
