  • Juice of half a lemon

Instructions

  • Cook the Golden Rice:

    • Heat olive oil in a medium pot over medium heat.
    • Add turmeric, cumin, and coriander, and stir for 1 minute until fragrant.
    • Stir in rinsed basmati rice until evenly coated with the spices.
    • Pour in coconut milk (or broth) and add salt. Stir to combine.
    • Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
    • Once the liquid is absorbed, remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
  • Prepare the Spiced Chickpeas:

    • Heat olive oil in a skillet over medium heat.
    • Add chickpeas, smoked paprika, cumin, garlic powder, cayenne (if using), and salt. Stir to coat the chickpeas evenly.
    • Cook for 5–7 minutes, stirring occasionally, until golden and crispy.
    • Squeeze fresh lemon juice over the chickpeas for a zesty finish.
  • Assemble and Serve:

    • Spoon the golden rice into bowls.
