Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- Salt and pepper, to taste
For the A1 Sauce Blend:
- 3 tablespoons A1 sauce
- 1 teaspoon honey
- A pinch of cayenne pepper
For the Sandwich:
- 2 ciabatta, brioche, or sourdough rolls
- 1/2 cup caramelized onions (instructions below)
- 2 large lettuce leaves
- 4 slices of ripe tomato
- Olive oil or butter (for toasting bread)
Instructions
Marinate the Chicken:
- In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
- Add the chicken breasts, ensuring they’re well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours).
Caramelize the Onions:
- Thinly slice one large onion.
- Heat 2 tablespoons of olive oil in a skillet over low heat.
- Add the onions and a pinch of sugar, stirring occasionally, for 15–20 minutes until golden and caramelized. Set aside.
Grill the Chicken:
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Remove and let rest for 5 minutes.
Toast the Bread:
- Lightly brush the bread rolls with olive oil or butter.
- Place on the grill for 1–2 minutes, until lightly toasted.
Prepare the A1 Sauce Blend:
- In a small bowl, mix A1 sauce, honey, and cayenne pepper for an extra kick.
Assemble the Sandwich:
- Spread a generous layer of the A1 sauce blend on the bottom half of the bread.
- Add the grilled chicken breast, caramelized onions, lettuce, and tomato slices.
- Top with the other half of the bread.
Serve:
- Serve warm with your favorite side dish, like sweet potato fries or creamy coleslaw.
Notes
- For a smoky flavor, use a charcoal grill for cooking the chicken.
- Substitute the A1 sauce blend with BBQ sauce for a different taste profile.
- Add grilled bell peppers or melted cheese for extra layers of flavor.
